A few things...
The Bantam is a mining ship, and as such you want to put as many mining lasers on it as possible, so that you can maximize its bonuses. It's only possible to put 2 mining lasers on it; you can choose from Miner I, a variety of named mining lasers, or Miner II (the best choice) depending on how good your Mining skill is, and how good your Electronics skill is.
Because you install mining lasers and thus have no guns, you need to install a little defense, perhaps a Small Shield Booster or a Civilian Shield booster, in the med slots, so that you can deal with the small NPC pirates that might come pester you as you mine. You need to stay in 0.7 or above, as going to a lower level system will involve tougher NPC's that might chew through your Bantam's shields.
Finally, for the low slots, probably the best choice is Expanded Cargohold I modules, for extra cargo space.
Regarding the gun that comes with the Ibis, it's free, so what you see on the market is some other player attempting to be a smart ass. The Market is player-driven, so some people attempt to scam the unwary by posting huge prices on worthless stuff, or by setting up buy orders to buy your battleship for 1 ISK. Others also set up orders to buy your battleship, but at a cost below what you would get if you were to recycle it into minerals and sell the minerals. You just have to be careful with the market.
Yes, if you're going to choose a mining career, it's recommended to get your own hauler. Not just for mining, but you'll need to haul all the stuff you mine to the station where you can sell it for the best price, and that's probably a few systems away. The Caldari have the Badger and Badger 2 for haulers; but a lot of people opt to go for the Gallente Iteron series, because they end up being better once you get good Industrial skills. Up to you, whatever you want to do.
Yes, mining with a hauler would then involve using your Bantam to mine into a jetcan, then bringing in the Industrial to move the ore to station. I don't recommend mining till the container is full, rather, mine just enough so that when you bring your industrial in, the industrial will be full. Most of them have 5000m3 or so, look at what the cargo hold space is on it, when you buy it, and then mine that much ore each time. This way you minimize how much any ore thief can steal from you.
